This is a recipe for homemade (otherwise known as not out of a bag of frozen) french fries. More economical and better for you — no complex ingredients here. It does take more doing…but it is pretty easy and only requires a little more effort and forethought. Hope that you enjoy!!

Oven French Fries
Preheat oven to 475 degrees and put the oven rack to the lowest position. Peel 3 large russet potatoes (8oz. a piece), cut them into even, lengthwise wedges (about 10-12 per potato). Place the potato wedges in a bowl and cover them with very hot tap water to soak for about 10 minutes. Meanwhile, coat a heavy duty rimmed baking sheet (10X18 inches) with 4 T peanut or canola oil. Sprinkle the pan with 3/4 t. salt and 1/4 t. fresh ground pepper. When the potatoes have soaked for 10 minutes, drain them and then dry them off really well. Wipe out the bowl and return the potatoes to it. Toss them with 1 T oil and arrange them in rows on the baking sheet. Cover the pan tightly with foil. place it on the lowest oven rack and bake for 5 minutes. Then, remove the foil and continue baking them for 15 or so minutes until the bottom of the wedges are spotty golden brown. Flip each wedge and arrange them in one layer and continue cooking for 10 or so minutes until they are brown and crisp. Put them on a paper towel lined plate to drain and serve.
It really is easy and they are yummy fries. Dangerously good. 🙂
