This is my holiday gift to the boys’ teachers this year. It is really yummy and economical to make, since all the ingredients are usually on sale this time of year. I particularly like making brittles because they require very little attention. The only thing is that you have to make it on a day when it isn’t raining/snowing outside.
Pecan Spice Brittle
1 cup sugar
1/2 cup butter
1/2 cup light corn syrup
1/2 cup water
1 t. baking soda
1 cup chopped pecans
1 t. ground cinnamon
Lightly coat large baking sheet with butter; set aside. In heavy 2-quart saucepan, combine sugar, butter, corn syrup, and water. Cook over medium heat stirring occasionally until sugar is dissolved and mixture comes to full boil, about 4-9 minutes. Brush insides of pan with pastry brush dipped in water to dissolve any sugar crystals. Cook stirring occasionally, until candy thermometer registers 300 degrees F., about 10-18 minutes. Remove from heat. Working quickly, stir in baking soda (mixture will foam); stir in pecans and cinnamon. Immediately pour mixture onto prepared baking sheet, spreading evenly to 1/8-1/4 inch thickness. Cool compleately. Break into pieces. Store in airtight container. Makes about 1 pound.
