Soul Man

I drive an ancient car, y’all. And, actually, I really like driving it. It is a responsive little car and reminds me of my first Accord, the car that I had owned for over half of my life when we finally had to let it go.

I loved that car. Her name was Honey Bun.

That reminds me that I haven’t named my current car. I should get right on that.

Anyway, the ancient car also has the best stereo. Nothing special or added (I don’t want y’all to get the image of me driving along in an altered car that pulsates with every beat of the music — though, that is a funny image) just a great system that came with the car.

The other day, I switched the channel from Sports Radio…you know, if someone had told me years ago that I would, later in life, listen to a bunch of Sports Radio I would not have believed them.

Ditto on the wearing of skirts 99% of the time.
Ditto the getting silver hair and not giving a care.
Ditto loving and watching baseball.
Ditto….too many things to ditto.

Anyway, this song came on and it sounded so awesome.

Totally made my day.

Long Time, No Blog

Well, y’all, sorry for the unintended hiatus.  I didn’t blog for what felt like a week and it turned into a month, lickety-split.  The passage of time is scary, fast.

Anyway, I hope that y’all are having a good Spring!

Mine, so far, has been Spring Break (boys), Spring Break (me), Easter, IEPs, meetings, busy, busy, busy.

I’ve been doing a little ruminating, too.  Those of you who know me in person know that my personality goes more toward the Red Riding Hood direction, skipping along with no thought of a Big Bad Wolf.  That is true — most of the time.  But, Spring is the time of planning for next year and so the ruminations have been rather fast and furious, lately.  I don’t know how the Chicken Littles among us do it…..just a little Chicken Little for me  and I’m done for.  So, back to Little Red Riding Hood….though, I am a little bit older and, hopefully, wiser than Little Red, so maybe I’ll pack a stun gun in my picnic basket and get back to skipping.  Do you hear me, ruminations?  I’m packing.  Be warned.

Sounds like a plan to me.

Mama Susie and #3 and #4 at Cane Creek Nature Preserve

This is some of what we did on Spring Break.  Can you believe that this gorgeous place is 10 miles from where my parents live?  North Alabama is beautiful and unexpected.  You drive down winding country roads, past some chicken houses, and several Baptist churches before going down a rutted road.  Then, you suddenly come upon 700 acres of pure, undisturbed gorgeousness and the nicest hosts you’ll ever meet.  There are beautiful caves, a canyon, a lovely creek with very chilly water and smooth stones for barefoot walking on, waterfalls, rare wildflowers, and lots of  hills for climbing.

I can’t wait to go back….in the fall/winter when the bugs are asleep — totally, completely asleep.  Usually I’m a big fan of bugs.  I find them very entertaining, captivating, really.  They don’t bother me in general, except for the little ticks.  Why?  Because little ticks look a lot like freckles…..which I have like, a million of.  So, it gets a little confusing for me.  Other than that, bugs don’t bother me.  For instance, I now have ants in my kitchen.   They don’t seem to be the type to get into the sugar bowl or onto the mangos, so, you know, we’ll live in peace.

Speaking of mangos, I had a lovely one today in a salad with some avocado.

Speaking of avocado, I got 9 today at Aldi for 10 cents each.

Speaking of Aldi, I love it.  Big time.

Speaking of big time….I’m big time rambling now, so I’ll go.

But not for a month again.

Music For Friday

I hope that this finds y’all having a good Friday!

Here are some songs that have been running through my head this week:

This is “Museum of Flight” by Damien Jurado. It is off his recent album, Maraqopa. It is sort of haunting and beautiful, I think.

Pokey LaFarge and the South City Three sing “So Long Honeybee, Goodbye”. Y’all know how much I love Pokey.

Wilco sings “I Might” off their latest album. First Wilco album I haven’t owned in, like, forever. I need to fix that.

Here’s Nick Waterhouse and the Turn-Keys doing “Some Place”. He’s retro like Buddy Holly. Gotta love some retro-sound.

Finally, y’all may have heard that Earl Scruggs died yesterday. When musical greats die, we commonly say that there will never be another. This is definitely true for him, especially in regards to his talent and innovation. Look at those fingers fly.  Play it Earl!

My Rice

 

I don’t think that this qualifies as a recipe, really, but it is what I frequently eat for lunch.  When I make this rice, someone in my family always says, “What smells so good in here?”

I don’t measure when I make this, so these are general guidelines.  Try it if you like rice, spinach, eggs…..and a hot lunch vs. a cold one.

 You will need:
  • 1-2 cups cooked, leftover rice  (I like this with basmati and brown, though any kind will be delicious.)
  • 1 – 2 T. oil (I use either coconut or extra virgin olive, though I suppose any kind would be fine.)
  • 1 -2 cloves minced or sliced garlic (I usually slice mine and then remove it later.  Of course,  I always miss some pieces and end up eating a few anyway, so I don’t know why I bother.)
  • 1 T. grated fresh ginger if  you have it (I often don’t….but it is tasty)
  • frozen spinach (of course you could use fresh, but I usually don’t since I can get frozen pesticide-free spinach cheaply.)
  • 1 – 2 T. soy sauce or tamari
  • 1 – 2 eggs
  • toasted sesame oil for drizzling
Put the spinach in a microwave-safe bowl and nuke it in the microwave until it thaws.  This usually takes 2 minutes in my microwave.  Times will vary for type of microwave that you use and, of course, with the amount of spinach.  Squeeze the spinach to rid it of excess water.  Set aside. While you’re nuking your spinach, put a large frying pan or skillet (I use my big cast iron one) over medium low heat.  Add the oil and saute the garlic (and the ginger, if using) until it softens.  Don’t let it brown.  After a minute or so, add the rice and stir it all together really well.  Continue stirring on an off for a few minutes until rice is warm.  (You might want to up the temperature a bit, at this point.)  Add the spinach to the skillet and stir again.  Cook for another minute or so or until spinach is warm.  Drizzle the rice/spinach with the soy sauce and stir to distribute.  Remove pan from heat.  In another skillet, (or in the same one if, like me, you prefer using the fewest pots possible) scramble the egg(s) using a little more oil.  (If you use the same skillet as you did for the rice, put the rice in a serving bowl and wipe out the skillet before continuing with the egg scrambling.)  When the eggs are done, toss the rice mixture with the eggs to combine.  Serve immediately drizzled with a bit of toasted sesame oil.
Oh, and I also make this without the eggs sometimes when I’m aiming to make lunch for several days.  The rice mixture reheats really well and is yummy topped with a fried egg instead of scrambled.  If you do it this way, I suggest topping each portion with toasted sesame oil on the day that you eat it instead of when you initially make the rice.

Yesterday

Y’all know all that I had planned for yesterday?

Yes. That all didn’t get done.

No, instead, I sat in traffic some yesterday.

It wasn’t terrible, though, the not getting everything done. Why? I guess that I expect it. Mainly because I always plan more than I can get done….which makes me optimistic? Or, possibly overly ambitious? Or just dumb because it almost always happens?

Unfortunately, I think it may be all of the above.

But, back to yesterday….

I had driven Jon and E to the zoo so that they could have some Daddy and son time. Which was a good idea, of course, until we remembered that there was a St. Patrick’s Day parade that was going right by the zoo. Not only that, but I ran into the parade right after dropping them off — not actually ran into the parade, though I did have to do a u-turn right in front of the first float.

I continued back home but stopped on the way to go to the library.

And, then a huge storm came. We were waylaid in the library for thirty minutes. Then, I got home and made some coffee. About ten minutes later, I got a call that the storm was bearing down on the zoo and could I head back over. Which I did.

Traffic again…only even more entertaining traffic since it included an incredible thunder storm and hail and lightning and fire trucks and very, very sodden St. Patrick’s Day revelers on their way back home. I know that it is fun to wear ridiculous clothing and go to a parade. I get that. What I now know is that the ridiculous looks exponentially more so when soaking wet…..like that guy with the green and white polka dotted dress…yep, him and several hundred others.

I wished that I’d brought my camera.

I’m off to accomplish some of what I didn’t yesterday.

Song for Saturday

Hey y’all!  I hope that you’re all having a pleasant Saturday.

I’m cooking:

pumpkin bread, lasagna, salad dressing, roasted broccoli, chicken salad, hummus….maybe some other stuff, too.

I’m cleaning:

everything.  Cleaning is such a sisyphean thing, isn’t it?  And, yet, I feel so much better when it’s done.

I’m making:

an apron from a men’s dress shirt I mistakenly bought (and couldn’t return, duh!) to the Goodwill.  I think it’ll be a good project.  Pictures if it turns out well!

I’m listening:

to this cover of  Adele’s “Rolling In the Deep” by John Legend.  He does the whole thing a cappella.  I like it.

Cupcakes for St. Pat’s Day!

This is a reposting from last year, y’all.  But these cupcakes….whoa.  Mega yummy and really easy, too. I know that St. Patrick’s Day isn’t for a few days, but you need to make these.  So, I thought I’d give you a little time for advance planning.  Just kidding — I’m not really not bossing you….these cupcakes are no joke though.  People in your life will be delighted if you make them. 🙂

I made some cupcakes today. I took some to the secretaries at J’s school, just because they’re so sweet to him, and I also took some to a friend. Later in the afternoon, I got an email from that friend saying that it was the best cupcake she’d ever had.

High praise, indeed, though this recipe might just warrant it.

These are good cupcakes. To like them you must adore: chocolate, whiskey, Irish coffee, creamy filling, and a really moist coffee-chocolate cake. That covers 95% of the population, I’d bet.

Irish Coffee Cupcakes

Makes 12 standard cupcakes.

Preheat oven to 350. Line a standard cupcake pan with paper cupcake liners.

Ingredients

Cake:
1 1/4 cup all purpose flour
1 t. baking powder
1/4 t. baking soda
1/4 t. salt
1 cup strong brewed coffee
6 T. cocoa
1 1/4 cups brown sugar, packed
1 stick butter, room temperature
2 t. vanilla extract
2 large eggs, room temperature

Filling:
4 oz. cream cheese, room temperature
4 T. butter, room temperature
6 T. powdered sugar
1 T. + 1 t. Irish coffee liquor

Glaze:
2/3 cup chocolate chips
1/4 cup heavy cream
2 t. agave nectar or white corn syrup
2T. Irish whiskey

Instructions:

Sift the cocoa into a small bowl.

In a 2 cup measuring cup, microwave the coffee until it is just about to boil. Take it out of the microwave and pour it into a large bowl. Gradually whisk in the sifted cocoa, until smooth. Add the butter and whisk until butter is combined with the cocoa and coffee. Add the sugar and whisk again until combined. Cool until tepid. While it is cooling, sift the flour, baking powder, baking soda, and salt into the same bowl that you used for the sifted cocoa. After the chocolate/coffee mixture has cooled, add the eggs and the vanilla. Whisk until combined. Add the flour mixture and whisk only until just combined. Do not overmix. Pour into the cupcake liners and bake 20-22 minutes until just set in the middle. Watch them like a hawk at the end of baking time. Pulling them out at the right time ensures a moist cake.

Cool completely.

To make filling:
Beat the cream cheese and butter with a paddle attachment in a mixer or use a food processor. Add the sugar. When it is combined, add the Irish coffee liquor.

To make glaze:
Put both the chocolate chips and heavy cream into a microwave safe bowl. Microwave the mixture at half power for one minute intervals, stirring in between each minute. When the mixture is smooth, add the corn syrup or agave nectar. Stir in the whiskey.

To assemble:
Using a sharp, short knife, cut 2-inch cones out of the top of each cupcake. Remove the cones from the cupcakes and trim off the point of each cone to make each cone into a disk roughly 1/3 inch thick. Place some of the filling in each cupcake. Top the filling with the corresponding disk of cake. Dip the top of each cupcake in the glaze. Make sure to twist your wrist as you remove each cupcake from the glaze. That will give it a great little swirl on top.

These are so yummy, y’all. I know that it looks like too much work, but they are really easy to put together. Also, the filling can be made and refrigerated for up to 2 days ahead and the cupcakes can also be baked hours ahead. The glaze is easy and makes each cupcake look gorgeous.

Closet Cleaning and Soft Stuff and Dancing

I’m in the middle of cleaning out my closet today and doing the transition from winterish to springish clothes.  Now, be forewarned.  You should all know that this will alter the pattern of weather that we’ve been having and cause a freak snow storm to hit St. Louis.  Oh, you know, I take that back.  I did leave a wool coat and boots within easy reach and so, since I did that we won’t have any crazy weather…..hopefully?

In the process of the clothes switcheroo, I have discovered that I own 20 skirts.  20.  This isn’t counting winter ones, either.  I couldn’t believe it, y’all.  I just kept hanging them up.  This is what happens if you shop at a store that sells clothing for less than you pay for a gallon of milk.  Needless to say, I’m done buying skirts for now.  Unless I come across a great denim one.  Then…..I’ll have 21.

Two things I want to share today, before I get out of this dusty room and start ironing like crazy:

  • This site, Child’s Own Studio, is incredible.  What the designer does,  y’all, is take kid’s drawings and make the animal/person/creature/whatever into a soft toy.  You know crazy kid drawings — she does those too.  So very creative and wonderful.  She was featured on a couple of blogs and now has enough business for 2 years or something like that.  What a great idea!
  • Y’all are probably familiar with Purl Soho.  The Purl Bee is their project blog and they featured the sweetest, chubbiest bunny on there this week.  It almost makes me wish that I could knit.  And, the bunny is based on an equally (if not a little more, in my opinion) darling owl.  So cute.

Okay, I’m off to iron.  Well, maybe first I’ll do a little Just Dance 3.  We checked it out from the library and I love it so much that I think that I might have to buy it — used of course.  I had forgotten how much I like to dance.  It makes me happy.  It is problematic, though, because I have this little boy, E, and he gets mad because I get four stars every time.  Even after I explained about all the dance that I’ve had and how it would be ridiculous if I didn’t get four stars — he still wasn’t buying it.  So I guess I’ll be doing clandestine dancing for now.  Oh well.

Pretty House Tour

Every once in awhile on Design*Sponge, I see a house that I could basically walk into and claim as mine.  Today, I saw one like that.

Now, the space itself isn’t all that amazing — no spectacular views or walls of windows or anything like that.  I just really like how personal and colorful and bright the whole thing is.  Actually, most spaces that I love look a lot like this one.

I’ve come up with a formula…..

mcm furniture + neutrals + beautiful color + nice textiles + (mostly) white walls + lots of light + unique art and accessories = my kind of space

I  find myself saying “yes, yes, yes,” when I look at this space instead of “are you kidding me, really?”.

Noted.
