I hope that everyone had a Merry Christmas. We had a fun one. This year, we just went to see my family in Alabama, and it was the first Christmas Eve/Day that we had spent with them in a long time. It was great and a nice change of scenery from our two bedroom apartment. Now that we are back, I’m doing some cleaning out and organizational stuff. I have made the decision to educate our oldest son at home during the coming semester and that has spurred me on to getting some things done. I also have some lesson planning to do for that, as well. So, I’ll come back to blogging more regularly in a week or so, after my little duckies are in a little bit better-looking row. Until then, I wish y’all a Happy New Year! Don’t forget to eat your black-eyed peas, turnip greens, cornbread and pork on that day! By the way, does anyone else think that it is funny that the New Year’s day meal is really similar to our rural Southern grandparents’ regular, everyday, lunches? (Minus the pork, of course.) It is good food, anyway. Of course, none of the boys but the baby will eat the turnip greens, but I digress. Happy New Year, everybody!

I hope that everyone had a Merry Christmas. We had a fun one. This year, we just went to see my family in Alabama, and it was the first Christmas Eve/Day that we had spent with them in a long time. It was great and a nice change of scenery from our two bedroom apartment. Now that we are back, I’m doing some cleaning out and organizational stuff. Well, I’ve made my to-do list for all the things that I need to do before we leave town for our X-mas trip and I have determined that I will not be able to sit down until then because of the staggering amount of stuff to do (not really, but almost). This is my holiday gift to the boys’ teachers this year. It is really yummy and economical to make, since all the ingredients are usually on sale this time of year. I particularly like making brittles because they require very little attention. The only thing is that you have to make it on a day when it isn’t raining/snowing outside. Pecan Spice Brittle 1 cup sugar 1/2 cup butter 1/2 cup light corn syrup 1/2 cup water 1 t. baking soda 1 cup chopped pecans 1 t. ground cinnamon Lightly coat large baking sheet with butter; set aside. In heavy 2-quart saucepan, combine sugar, butter, corn syrup, and water. Cook over medium heat stirring occasionally until sugar is dissolved and mixture comes to full boil, about 4-9 minutes. Brush insides of pan with pastry brush dipped in water to dissolve any sugar crystals. Cook stirring occasionally, until candy thermometer registers 300 degrees F., about 10-18 minutes. Remove from heat. Working quickly, stir in baking soda (mixture will foam); stir in pecans and cinnamon. Immediately pour mixture onto prepared baking sheet, spreading evenly to 1/8-1/4 inch thickness. Cool compleately. Break into pieces. Store in airtight container. Makes about 1 pound. Enjoy!
